Here’s the latest on how I foil boat briskets. The idea behind a foil boat is that it protects the flat from the direct heat preventing it from drying out while continuing to render the exposed fat cap. It also cooks the flat in the tallow resulting in a very moist and tender flat. The foil can sometimes stick to the brisket, so I like to put a little tallow down to prevent that.
